Dark Woods - Colombia, Jario Humberto Lopez Pink Bourbon
Regular price £11.95
An exclusive micro-lot produced by Jairo Humberto Lopez on his 16 hectare Finca Villa Norena coffee farm in the Tolima region, one of our favourite sources of Colombian coffee. Located near to the Nevado del Tolima volcano in Ibague, the towering peak is a direct influence on the diverse micro-climates on the farm and combined with the favourable altitude these help shape the complex flavours of this coffee.
Pink Bourbon is a rare hybrid of Yellow and Red Bourbon and is very hard to reproduce and isolate with consistency as the genes that express it's colour are recessive to both. The reward is a cup with enhanced sweetness and complexity as well as additional resistance to coffee leaf rust, so it is becoming more popular with progressive and quality-focused producers.
Expect flavours of Blackcurrant Nectarine and Butter shortbread.
We have chosen this coffee because of its interesting flavour profile of sweet fruit and shortbread, but also the Veriatal and process are very similar to a coffee Sam had pre selected for the uk Barista championship in 2020 that sadly never happened.hopefully he will be able to enter the competition scene again soon. Pink Bourbon is the hybrid of Yellow and Red Bourbon and is very hard to grow in high volume or with consistency as the genes that express it's colour are recessive to both of the other verities so it only occurs in small micro lots so is quite rare. The reward is a cup with enhanced sweetness and complexity and almost always a delicate Orange blossom florality.
